Beef Bean Cheese Enchilada Casserole Bulk Recipe
3 cups El Cid Enchilada Sauce Mix
9 ¼ lbs. ground beef
9 ¼ lbs. ground turkey
1.5 gallons of water
1-1/8 oz. chopped onions
4 lbs. shredded Cheddar cheese
2 (7 lbs.) Refried Beans #10 can
100 corn tortillas
2 (24"x 16"x 2") baking pan
Sauce Preparation: In large pot, add water and Enchilada Sauce Mix. Stirring constantly until mixture is smooth. Boil for 5 minutes. Reduce heat to low, simmer 15 minutes. Stir frequently. Set aside.
Meat Preparation: In large pot, combine onions, beef and turkey. Cook meat in its own fat until it loses its pink color. Drain fat.
Bean Preparation: Add 1-2 cups of cooked El Cid Enchilada Sauce to thin refried beans so it is a spreading consistency.
Casserole Preparation: Preheat oven to 350°F. Cover bottom of pan with thin layer of cooked El Cid Enchilada Sauce, a layer of tortillas, layer of refried beans; top with meat, sauce and cheese. Add another layer of tortillas, sauce and shredded cheese. Cover, bake for 30 to 40 minutes. Remove from oven and let stand 20 minutes before serving. Makes 100 2x2-1/2 inch portions. |
